Stewing for a Simple Meal
A nice hearty stew is wonderful on a chilly day. And there’s really nothing more simple than soup or stew. I enjoy cooking and baking from scratch, but part of simplifying your life is to not over-do things.
I save my scratch baking for special recipes or special occasions. Otherwise, I mix ready made with scratch, i.e., my Simple Beef Stew. I use fresh meat and fresh potatoes, but I add canned veggies. It’s quick and easy, sort of a “set it and forget it”, after the meat is marinated. I like to make this on a Sunday morning, if I make a big enough batch, we eat it for lunch and dinner. This recipe is easy to double up. I hope you enjoy it!
A simple Beef Stew for chilly days.

Ingredients
- 1 pound cubed stew meat
- 1 cup white vinegar
- 1/2 TBS garlic salt OR 1 teaspoon garlic powder
- 1 TBS Worcestershire Sauce
- salt and pepper, to taste
- 1/4 cup all purpose flour
- 1 TBS oil
- 2 cups beef broth
- 1 can Veg-All
- 1 can Rotel (I use the Hot one)
- 1/2 to 1 can diced tomatoes
- 1 cup cubed potatoes
Directions
- Place stew meat, white vinegar, garlic salt, Worcestershire, salt, and pepper into a quart sized ziplock bag.
- Refrigerate at least one hour, over night is best.
- Leaving meat in ziplock bag, drain and discard liquids
- Add flour to bag, shake to coat meat.
- Heat oil in a large pot over medium heat. Add stew meat and cook until brown.
- Add beef broth, Veg-All, Rotel, and diced tomatoes.
- Bring to a slow boil, add potatoes, and cover.
- Turn heat to medium-low, simmer until potatoes are soft.
- Enjoy your stew!
